Caribbean Chicken Curry with Potatoes

Caribbean Chicken Curry with Potatoes

This dish is flavorful, colorful and healthy! Start with fresh ingredients, taken your time and enjoy the process.
Ingredients -
Marinade: First, prepare the marinade with:
- 1 cup heavy cream, Juice of 1 lime
- 3 tablespoons Seasoned Delicious Caribbean Mild Curry or, for more heat, try our Hot Curry Seasoning
- 2 teaspoons black pepper
- 1 teaspoon kosher salt
- 1 pound boneless, skinless chicken thighs, trimmed, cut into 1-inch cubes
Curry:
- 1 tablespoon Above Earth Avocado-Grapeseed oil blend
- 1 large yellow onion, diced
- 1 jalapeno pepper, seeded and diced
- 2 cloves garlic, peeled and minced
- 1 teaspoon cumin
- 1 teaspoon ground ginger
- 1 teaspoon kosher salt
- 1 pound baby Yukon Gold potatoes, cut into 1-inch dice
- One 28-ounce can diced tomatoes
- 1 cinnamon stick
- 1 tablespoon tomato paste
- 1 cup chicken stock
- 1 cup coconut milk
- 1/2 cup chopped fresh cilantro
Directions:
- For the marinade: In a resealable plastic bag, mix together the cream, lime juice, cardamom, cumin, turmeric, black pepper and salt. Add the chicken and toss to coat. Marinate in the refrigerator for a minimum of 2 hours and up to 4 hours.
- For the curry: Heat the oil in a large skillet over medium heat. Add the onions, jalapenos and garlic and cook until soft, 8 to 10 minutes. Add the cumin, ginger and salt and cook until fragrant, 1 minute. Add the potatoes, tomatoes, cinnamon, tomato paste and chicken stock; stir to combine. Raise the heat to high and bring the mixture to a boil, then lower the heat and simmer for 5 minutes. Add the chicken and all of the marinade. Cook, covered, until the potatoes are easily pierced, 20 to 25 minutes.
- Stir in the coconut milk and cook until the sauce has thickened slightly, another 10 minutes. Sprinkle with cilantro. Taste for salt and pepper and add more as needed.
Serve with Moroccan Couscous, Curry-Flavored Mashed Butternut Squash, or Coconut Curry Rice.

Experience one at the Cantine Veterans Memorial Complex near the Kiwanis Ice Arena on Sunday, Aug 11, from 11 a.m. to 6 p.m. Thousands of people came to the inaugural festival last year to enjoy live music, dance and a DJ. There were also more than 60 vendors; games and family fun activities for all ages; arts and craft booths; face painting; and a costume contest with a $250 grand prize. Bring the whole family to revel in the festive fun and culture and learn about these beautiful islands. The free event, a benefit for the Center 4 Creative Education, is sponsored by Seasoned Delicious Foods of Saugerties and Kingston's Harambee .
